I've gotten emails that said, if you forward this a company will give you money or a reward etc. How can a company track if an email they sent out was forwarded? Is it all scam? Then why would someone bother wasting their time if they won't even bennefit?

There isnt any software capable of that. It would have to be done via scripting within the message header and that would be dependent on the mail system. Unless everyone used the same mail backend, and they don't, it isn't possible.
Those emails are hoaxes.
